Vegetarians’ favourite first course meal, paneer tikka, might soon make it to the Guinness Book of World Records. Kwality Group’s corporate chef, G Sultan Mohideen, who has been awarded with many national and international honours for his culinary skills, has lately made an attempt to make the world’s largest paneer tikka weighing 72 kgs.

The attempt was made last month at Siri Fort Auditorium and Abbi Farms in front of the panelists that included chef Sibbal, vice president of Indian Chef Federation.

Chef Sultan marinated the square paneer block with essential herbs and spices. While the outside surface was marinated by rubbing the yogurt based marinade on the surface of the paneer, the inside portion was marinated by injecting the same marinade inside the paneer to maintain similar flavours throughout the block.

Specially designed skewer was inserted in the marinated giant paneer block and was put inside the customised tandoor. “Both the seekh (skewer) and tandoor were designed under my supervision because it was not possible to cook such a huge chunk in the normal tandoor. This tandoor’s height was around 4-5 feet with mouth double the size of regular tandoor. The seekh was covered with a special sheet that had spikes so that it can hold the paneer at a high temperature. Otherwise the shape would have been different.”

The final preparation was a result of six months of hard work. The chef said he wanted to popularise the Indian cuisine and become the pioneer of creating world records in the culinary circuit.

“Till now only one attempt has been made where 100 chefs were brought under one roof to cook biryani weighing tonnes, but no individual attempt has been made so far,” he informed.

The giant paneer tikka was later diced into 1,702 pieces and was served to a party of 1,200 people. Chef Sultan seems determined to make another such attempt, but he didn’t divulge the details.
